1 pinch  ground red pepper (cayenne)
8 each  Tortilla, flour, soft taco
1 each  cooking spray
0 1/2 lb  boneless skinless chicken breasts
0 1/4 cup  fresh chopped onion
2 tbsp  fresh jalapeno chili peppers
0 1/2 tsp  chili powder
0.125 tsp  salt
0.125 tsp  ground cumin
2 each  large garlic cloves
0 1/4 cup  cold water
2 tsp  cornstarch
1 1/2 cup  cooked long grain brown rice
1 cup  fat free shredded cheddar cheese
0 1/2 cup  chopped tomato
0 1/2 cup  fresh cucumber, peeled and chopped
0 1/4 cup  fresh cilantro
0 1/2 cup  Salsa, mild
1 cup  Sour Cream, nonfat
  1. Rub red pepper into each of the tortillas then stack and wrap them in aluminum foil. Heat in the oven for 15 minutes at 325 degrees.
  2. Place a large nonstick skillet over medium-high heat and coat with the cooking spray.
  3. Cut the chicken into 1/4-inch strip and add to the pan when it is hot.
  4. Add the onion, jalapeno, chili powder, salt, cumin, and garlic to the pan and continue cooking for 3 minutes.
  5. Stir together the water and cornstarch and add mix to the skillet.
  6. Bring mix up to a boil, stirring constantly, for 1 minute. Take off the heat when mixture has thickened. Stir in the rice.
  7. Mound 1/4 cup of the chicken mixture into the center of each tortilla.
  8. Add the cheese, tomato, cucumber, and cilantro, splitting evenly between each tortilla.
  9. Roll tortilla up and serve with salsa and sour cream.
