2 tbsp  canola oil
2 lb  medium potatoes
0 3/4 cup  fresh chopped red onion
0 1/4 cup  white all purpose flour
1 tsp  salt
0 1/4 tsp  black pepper
2 each  eggs
1 cup  unsweetened applesauce
1 cup  Sour Cream
  1. Heat oven to 450º F.
  2. Brush 2 baking sheets with 1 tablespoon of oil and put aside.
  3. Coarsely grate potatoes.
  4. In large bowl, add potatoes, onion, flour, salt, pepper, eggs, and the remaining tablespoon of oil. Toss to mix well.
  5. By tablespoonfuls drop batter onto baking sheets. Press lightly with back of spatula to form patties.
  6. Bake 10 minutes or until golden brown on bottom.
  7. Flip latkes and rotate baking sheets. Bake another 5 minutes or until golden.
  8. Serve with the applesauce and sour cream.
