2 cup  pineapple juice
0 1/2 cup  Coconut, cream, canned
1 1/4 tsp  coconut extract
10 each  whole cloves
0.6667 tsp  cardamom, ground
2 each  cinnamon sticks
1 pint  vanilla frozen yogurt, no sugar added
3 1/4 cup  seltzer
1 1/4 tsp  rum extract
1 oz  fresh mint
  1. In small saucepan, combine juice, cloves, cardamom, and cinnamon.
  2. Over high heat, bring to boil. Reduce heat to low. Simmer, covered, 5 minutes; cool. Strain and discard spices.
  3. In small punch bowl or pitcher, combine juice, frozen yogurt, and coconut cream. Stir until frozen yogurt is melted. Stir in seltzer water and extracts. Garnish with mint sprigs, if desired.
