1 each  cooking spray
2 lb  medium potatoes
6 oz  red onion
0 1/4 cup  white all purpose flour
1/2 tsp  salt
0 1/4 tsp  black pepper
2 each  eggs
1 tbsp  canola oil
0 1/2 cup  unsweetened applesauce
0 1/2 cup  sour cream
  1. Heat oven to 450º F.
  2. Line 2 baking sheets with parchment paper and lightly coat with cooking spray. Set aside.
  3. Coarsely grate potatoes onto large kitchen towel. Spread into thin layer. Cover with another kitchen towel. Roll to squeeze water from potatoes. Place in large bowl.
  4. Add onion, flour, salt, pepper, eggs, and oil. Stir to mix well.
  5. Drop by tablespoonfuls onto baking sheets and press lightly to make patties. Lightly coat top of each latke with cooking spray.
  6. Bake 15 minutes or until golden brown on the bottom.
  7. Flip latkes and rotate the baking sheets. Bake another 10 minutes or until golden.
  8. Serve with applesauce and sour cream.
