1 each  cooking spray
0.3333 each  chopped green bell peppers
0 3/4 cup  fresh chopped onion
2 oz  roasted lean ham, diced
2 cup  Beans, lima, frozen
2 cup  Corn, yellow, sweet, kernels, fresh
0 3/4 cup  cold water
0 1/4 tsp  salt
0 1/4 tsp  black pepper
1 cup  Tomatoes, dices, unsalted, canned
  1. Chop green pepper, onion, and ham.
  2. Place a nonstick skillet coated with cooking spray over medium high heat. When hot, add chopped green pepper, onion, and ham.
  3. Sauté the mixture until the vegetables become tender.
  4. Add the lima beans, corn, water, salt, and pepper and bring to a boil.
  5. Reduce heat, cover, and let simmer for 20 minutes.
  6. To finish, add the tomato and stir well.
