1 tbsp  canola oil
4 each  boneless skinless chicken breasts
14 oz  canned unsalted diced tomatoes
8 oz  no-salt tomato sauce
1 1/2 cup  chopped green bell peppers
0 1/2 cup  fresh chopped celery
0 1/2 cup  fresh chopped onion
2 each  medium garlic cloves
0 1/4 tsp  salt
1 tbsp  dried basil
1 tbsp  chopped parsley
0 1/4 tsp  ground red pepper (cayenne)
2.6667 cup  cooked white rice
  1. In a large skillet heat the oil
  2. Saute the chicken in the skillet for about 5 minutes on each side
  3. Pour the rest of the ingredients on the chicken and let simmer for 20 minutes
  4. Serve the chicken over 1/3 cups of steamed rice
