2 tsp  olive oil
1 each  medium onions
1 1/2 lb  boneless skinless chicken breasts
1 cup  cooking wine
0 3/4 cup  low sodium chicken broth
1 tbsp  Starch, arrowroot
1 pinch  black pepper
1 pinch  salt
  1. Heat the oil over medium-high heat in a large frying pan. Add the onion and stir-fry for 5 minutes. Add in chicken and cook thoroughly, about 5 minutes per side.
  2. Pour the wine over the chicken and cook for 4 minutes (until the wine is syrupy).
  3. Dissolve the cornstarch into the broth. Pour the broth mixture over the chicken and cook for 2 minutes (or until the sauce is thickened). Season with salt and pepper if you like.
