3 lb  fresh cauliflower
0 1/2 cup  cold water
1 each  medium garlic cloves
1 each  fresh leeks
2 tbsp  unsalted butter
1 pinch  black pepper
1 pinch  salt
  1. Cut cauliflower into small segments.
  2. In large saucepan over medium heat add water. Place cauliflower, garlic, and sliced leek into steamer basket and steam until completely tender, approximately 20 - 30 minutes.
  3. In food process puree mixture, while still hot, to consistency of mashed potatoes.
  4. Stir in butter. (For a smoother texture, blender can be used after butter is added).
  5. Add hot water as needed if mixture seems dry.
  6. Season with salt (if desired) and pepper to taste.
