3 lb  boneless pork loin
1 cup  tequila, 80 proof
2 cup  fresh lime juice
0 1/2 cup  olive oil
3 each  medium garlic cloves
0.125 tsp  salt

1 tbsp  lime peel zest
1 tbsp  ground oregano
1 tbsp  black pepper
1 tbsp  brown sugar
1 tsp  ground thyme
0 1/2 tsp  kosher salt
0.125 tsp  ground allspice
  1. Place pork in large self-sealing bag; combine tequila, lime juice, oil, garlic, and salt in medium bowl and pour over pork. Seal bag; refrigerate 24-48 hours.
  2. Remove pork from bag, discarding marinade. Pat pork dry. Heat oven to 350 degrees F. Combine remaining ingredients in small bowl, and pat rub mixture over all surfaces of pork.
  3. Place pork in shallow roasting pan; roast for 1 to 1-1/2 hours, until internal temperature registers 150-155 degrees F. Let rest 10 minutes before slicing to serve.
