1 1/2 lb  Pork, tenderloin, lean, raw
0.6667 cup  vegetable oil
0.3333 cup  fresh lime juice
2 tbsp  cider vinegar
1 1/2 tbsp  ground thyme
1 tbsp  brown sugar
1 tbsp  ground allspice
1 tbsp  ground nutmeg
2 tsp  black pepper
1 1/2 tsp  salt
1 tsp  ground cinnamon
0 1/2 tsp  ground cayenne (red pepper)
0 1/4 tsp  ground cloves
0.6667 cup  fresh chopped onion
2 each  Chile Peppers, jalapeno, whole
3 each  medium garlic cloves
Directions
  1. Combine oil, lime juice, and vinegar; add sugar, seasonings, onion, and garlic. Mix until blended. Pour over pork.
  2. Place pork in 1/2-gallon self-sealing plastic bag. Seal bag and marinate in refrigerator 8-12 hours or overnight.
  3. Drain pork; discard marinade, and place meat in a single layer, not touching, in a shallow baking pan and roast at 350 degrees F for 25-30 minutes, until pork is tender.
  4. Remove to serving platter and serve hot.
