4 each  whole loin lean pork chops
2 tbsp  white all purpose flour
0 1/2 tsp  salt
0 1/4 tsp  black pepper
1 tsp  unsalted butter
0 3/4 cup  low fat unsalted chicken broth
2 tsp  fresh ginger root
2 tsp  dijon mustard
2 tsp  stoneground mustard
4 each  fresh green onions
1 pinch  salt and pepper
  1. In small bowl stir together flour with salt and pepper. Dust chops lightly with seasoned flour.
  2. Melt butter in large nonstick skillet over medium-high heat; brown chops, about 2-3 minutes on each side. Remove chops and keep warm. Pour broth into skillet, increase heat and deglaze skillet by scraping loose browned bits on bottom of pan.
  3. Add ginger and cook, stirring frequently, 2 minutes. Stir in mustards and green onions. Season with salt and pepper. Spoon sauce around chops and serve.
