0 1/2 cup  cornmeal
0 1/2 cup  white all purpose flour
0 1/4 tsp  salt
2 tsp  low sodium baking powder
2 tbsp  sugar
1 each  eggs
0 1/2 cup  whole milk
2 tbsp  vegetable oil
2 tbsp  chopped red bell peppers
2 tbsp  chopped green bell peppers
  1. Preheat oven to 400 degrees F.
  2. In large bowl, stir together first five ingredients.
  3. In medium bowl, beat together remaining ingredients; add to dry ingredients and blend quickly.
  4. Spoon batter into greased muffin tins and bake until lightly golden, about 15-20 minutes.
