4 piece  canned pineapple slices
0 1/4 cup  pineapple juice
0 1/2 floz  rum
1 tsp  packed dark brown sugar
4 tsp  Coconut, fresh, shredded
  1. Line a 1-quart shallow baking dish with foil and preheat oven to 400 degrees F.
  2. Combine pineapple juice, rum, and brown sugar in a small bowl mixing until sugar it is dissolved.
  3. Place pineapple slices in dish and drizzle rum mixture over the top. Bake for 5-8 minutes until pineapples are browned.
  4. Sprinkle coconut over the pineapples and bake for 3-4 minutes longer.
  5. Divide between 2 plates and enjoy.
