0 1/2 cup  fresh chopped onion
2 each  medium garlic cloves
1 tbsp  Margarine, 80% fat, unsalted
1 tbsp  white all purpose flour
1 cup  low sodium vegetable broth
1 1/2 lb  sliced carrots
2 tsp  fresh ginger root
0 1/4 tsp  ground cinnamon
1 1/2 cup  orange juice
1 pinch  salt and pepper
1 tbsp  grated orange peel
  1. In a large saucepan, saute onion and garlic in margarine until tender, 3 to 4 minutes. Stir in flour, cook 1 minute longer.
  2. Add remaining ingredients, except orange juice, salt and pepper and orange zest; heat to boiling. Reduce heat and simmer, covered until carrots are tender, about 15 minutes.
  3. In a food processor or blender, process soup and orange juice until smooth. Season to taste with salt and pepper; garnish each bowl of soup with orange zest.
