1 cup  chopped scallions
24 oz  fresh baby spinach
1 tbsp  cornstarch
0 1/2 cup  half & half
3 oz  cream cheese
0 1/4 cup  sour cream
0 1/2 cup  fresh chives
0 1/2 tsp  salt
0 1/4 tsp  black pepper
0.125 tsp  hot red pepper flakes
  1. Wash and dice chives.
  2. Coat large saucepan with cooking spray and heat over medium. Add scallions and cook until tender, approximately 5 minutes.
  3. Add spinach and cook, stirring occasionally, until spinach is just wilted, about 5-8 minutes.
  4. In small bowl, whisk cornstarch and half and half until cornstarch dissolves.
  5. Move spinach to sides of pan and pour cornstarch mixture in center. Cover and stir occasionally until thickened, about 2 to 3 minutes.
  6. Reduce heat to low and stir in cream cheese, sour cream, chives, salt, black pepper, and red pepper flakes. Cook until creamy and heated through, about 5 minutes.
