2 cup  sugar
750 mL  white wine
12 each  fresh apricots
1 each  cinnamon sticks
1 each  vanilla beans
2 cup  vodka
  1. Heat sugar and wine in a large pot for 2 minutes over medium high heat, stirring continually.
  2. Mix in apricots, cinnamon, and vanilla. Let mixture boil and cook 30 seconds, slowly stirring after 15.
  3. Take pot off of heat and mix in vodka. Let mixture fully cool.
  4. Pour mixture into a bowl and cover with cheesecloth or a towel.
  5. Place in refrigerator for four days.
  6. Strain apricot mixture through a fine colander, saving liquid and apricots.
  7. Dispose of cinnamon stick and vanilla. Spoon the liquid into bottles and chill until ready to use.
