1 1/2 lb  whole loin lean pork chops
4 each  medium carrots
1 1/2 tbsp  vegetable oil
0 3/4 cup  red wine
2 tsp  fresh thyme
1 tsp  salt
1 tsp  garlic powder
0 1/2 tsp  black pepper
14 1/2 oz  canned unsalted diced tomatoes
1 cup  fresh chopped celery
0.3333 cup  golden raisins
  1. Brown pork in oil. Stir in wine and seasonings. Simmer covered for 45-60 minutes or until pork is tender.
  2. Stir in tomato, celery, and raisins; simmer an additional 15 minutes.
