Wash, peel skin, and core pears and slice into 1/2-inch cubes. Grate about 1 1/2 teaspoons of orange zest off of a fresh orange. Squeeze orange juice from orange and add in enough water to make 1/2 cup.
Add orange juice mixture, zest, sugar, anise, and cinnamon stick to a saucepot and heat 1 to 2 minutes or until sugar is fully blended in. Add in honey and pears and let mixture boil. Lower heat to medium and let simmer 3 minutes, stirring often.
Mix in cranberries and cook 6 to 8 minutes, stirring often. Let cool and spoon into a bowl. Serve cooled or cold.
