There is something about fall that makes cooking fun and inviting. The cool weather and turning leaves make for a great time to be in the kitchen chopping vegetables and creating meals. Try making this mouthwatering comfort food this weekend.
Salsa Turkey Meatloaf
Serving Size: 1/6 recipe
Yield: 6 servings
Cooking spray
1 pound lean ground turkey
1 egg
1/2 cup bread crumbs*
1 finely diced onion
1 garlic clove, minced
3/4 cup salsa, divided
1. Preheat oven to 400 degrees. Coat a 5x9-inch loaf pan with cooking spray. In a large mixing bowl, combine turkey, egg, bread crumbs, onion, garlic and 1/2 cup salsa. Mix thoroughly.
2. Place turkey mixture in loaf pan and spread evenly. Top with remaining 1/4 cup salsa. Bake for 50-60 minutes.
*Gluten-Free Tip: You can substitute grits or gluten-free crackers (crumbled) for bread crumbs in this recipe.
