Eating for Gestational Diabetes (continued)

 

Sample Menu
Here is a sample menu for a day that includes 30-45 grams carbohydrates per meal and one snack with 15 grams carbohydrate.

Breakfast (30 grams carb)

  • 1/2 cup oatmeal with 2 tablespoons toasted walnuts
  • 1 cup milk
  • 1 hard boiled egg

Snack (15 grams carb)

  • 6 ounces yogurt

Sample Menu

Lunch (45 grams carb)

Dinner (45 grams of carbs)

  • 4 ounces pork tenderloin (see recipe on next page)
  • 1 cup grilled vegetables (zucchini, peppers and tomatoes)
  • 1/2 cup quinoa
  • 1/2 cup plain yogurt with 3/4 cup strawberries

Many people say that depression is a side effect or complication of diabetes. Without discounting the association of the psychological condition with the physical one, I'm not convinced that our high and/or unstable glucose levels are directly responsible for that change in our mental state. My belief is that the unrelenting need for self-care, for following the sort of care schedules that can drive licensed, professional caregivers crazy, is what overwhelms us...
