Here is a sample menu for a day that includes 30-45 grams carbohydrates per meal and one snack with 15 grams carbohydrate.
Breakfast (30 grams carb)
- 1/2 cup oatmeal with 2 tablespoons toasted walnuts
- 1 cup milk
- 1 hard boiled egg
Snack (15 grams carb)
- 6 ounces yogurt
Lunch (45 grams carb)
Dinner (45 grams of carbs)
- 4 ounces pork tenderloin (see recipe on next page)
- 1 cup grilled vegetables (zucchini, peppers and tomatoes)
- 1/2 cup quinoa
- 1/2 cup plain yogurt with 3/4 cup strawberries
