Herb-Roasted Pork Tenderloin

2 tablespoons olive oil
2 tablespoons apple cider vinegar
1 tablespoon tarragon, dried
2 garlic cloves, minced
1 pound pork tenderloin
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1. Preheat oven to 350 degrees.
2. In a small bowl, whisk together olive, vinegar, tarragon and garlic. Season pork tenderloin with salt and pepper on all sides.
3. Place tenderloin in a shallow baking dish. Pour sauce over tenderloin ad turn several times to coat. Bake for 30 minutes.
200 calories, 11g Total Fat, 2g Saturated Fat, 65mg Cholesterol, 339mg Sodium, 1g Total Carbohydrate, 0g Dietary Fiber, 1g Sugar, 24g Protein.
