0 3/4 tsp  caribbean jerk seasoning
4 each  boneless skinless chicken breasts
1 cup  canned coconut milk
0 1/2 cup  orange juice
1 tbsp  fresh basil
0 1/4 tsp  kosher salt
1 each  canola cooking spray
2 tsp  white all purpose flour
Directions
  1. Coat the chicken with the Jamaican seasoning.
  2. Mix together the coconut milk, orange juice, basil, and salt in a bowl. Put half of the mixture in a resealable bag.
  3. Place the chicken in the bag, seal, and refrigerate for a minimum of 8 hours. Store the rest of the mixture in the refrigerator.
  4. Light the grill. Spray the grill rack with the cooking spray. Take the chicken out of the bag and throw away the marinade. Grill, covered, for 5 minutes then turn over and grill for another 5 minutes.
  5. Place the reserved coconut mixture in a saucepan. Mix in the flour. Bring to a boil over medium-high heat. Decrease the heat and simmer for 5 minutes. Pour over the chicken.
