2 1/4 cup  oat bran
0 1/4 cup  packed brown sugar
1 1/2 tsp  ground cinnamon
1 tbsp  low sodium baking powder
1 each  Banana, medium, fresh
0 3/4 cup  unsweetened applesauce
1 oz  seedless raisins
1 each  eggs
0 1/2 cup  orange juice
0 3/4 cup  fat free milk
2 tbsp  canola oil
  1. Preheat oven to 425 degrees.
  2. Mix the oat bran, brown sugar, cinnamon, and baking powder and set aside.
  3. In a separate bowl mix the egg with orange juice, milk, and oil.
  4. Mix fruit and blend with dry ingredients.
  5. Add the liquid ingredients to the dry and mix until moist.
  6. Spray muffin tin with a non-stick coating. Pour batter into muffin tins.
  7. Bake for 15-17 minutes. Remove muffins from pan after 10 minutes. Cool on a rack.
  8. Freeze muffins for later use.
