  1. Peel the cucumber, cut in half lengthwise, discard seeds, and cut into thin slices.
  2. Peel the tomatoes, discard the seeds, and cut into 8 wedges.
  3. Cut the green pepper in half, discard seeds, and chop into 1/4 inch pieces.
  4. Mix together the cucumber, tomato, green pepper, carrots, vegetable oil, vinegar, coriander seeds, and sweetener.
  5. Refrigerate, covered, for at least 2 hours.
