16 oz  Peaches, canned, with light syrup, slices
0 1/4 cup  low sugar orange marmalade
0 1/4 tsp  salt
0 1/4 tsp  ground nutmeg
0 1/4 tsp  ground ginger
0.125 tsp  black pepper
1 each  cooking spray
6 each  boneless skinless chicken breasts
1 tsp  cornstarch
2 tbsp  cold water
Directions
  1. Drain peaches, reserving 1/2 cup syrup.
  2. Mix together 1/2 cup syrup, marmalade, salt, nutmeg, ginger, and pepper.
  3. Coat skillet with cooking spray and heat over medium high.
  4. Add chicken and cook 5 minutes, turning only once.
  5. Mix in peaches and marmalade mix.
  6. Bring just to boil. Cook, covered, for about 10 minutes.
  7. Transfer the chicken onto a plate using a slotted spoon.
  8. In small bowl, blend cornstarch and water. Add to pan. Bring back to boil. Cook for 1 minute, stirring continuously.
  9. Drizzle sauce over chicken. Serve.
