1 tsp  extra virgin olive oil
1 lb  Veal, breast, whole, raw
5 each  fresh green onions
0 1/2 cup  Marsala wine
3 tbsp  dijon mustard
0 1/2 cup  lowfat plain yogurt
1 pinch  black pepper
1 each  parsley sprigs
  1. Heat the oil in a nonstick skillet. Saute the veal for 1 minute then turn over and saute for another minute. Transfer onto a plate.
  2. Put the onions and wine in the skillet. Bring to a boil and cook until half of the liquid has evaporated. Mix in the Dijon, yogurt, and pepper.
  3. Add the veal to the skillet mixture and cook for 4 minutes. Set the veal on plates and spoon the pan juices on top. Garnish with parsley.
