1 cup  long grain brown rice
1 tbsp  Butter, unsalted
1 each  medium shallots
2 each  fresh green onions
1 each  medium carrots
0 1/2 cup  snow peas
0 1/2 cup  fresh mushroom slices
2 tbsp  white wine
1 1/2 cup  vegetable broth
1 pinch  salt and pepper
2 tbsp  sesame seeds
  1. Let the rice soak in a bowl of water for 2 hours, rinse, and then drain.
  2. Melt the butter in a nonstick saucepan. Saute the shallot until it becomes soft. Mix in the onions, carrot, snow peas, and mushrooms. Saute for 3 minutes.
  3. Stir in the rice and cook for 2 minutes.
  4. Add wine and broth. Bring to a boil then decrease heat and simmer, covered, for 25 minutes.
  5. Turn heat off and fluff. Sprinkle with salt, pepper, and sesame seeds.
