4 each  boneless pork chops
0 1/4 tsp  black pepper
2 each  medium shallots
0 1/2 cup  cooking sherry
1 tsp  dried rosemary
  1. Cook the pork chops on both sides until browned. Season with pepper, shallots, sherry, and rosemary.
  2. Decrease the heat to low and simmer, covered, for 10 minutes. Pour the pan juices over the pork chops.
