1 each  Gelatin, unsweetened, dry packet
0 1/4 cup  cold water
10 oz  frozen red raspberries
1 cup  Yogurt, plain, nonfat
0 1/2 tsp  vanilla extract
2 each  egg whites
1 tsp  fructose sweetener
1 tbsp  slivered almonds
  1. Mix together the gelatin and cold water. Set over hot water to dissolve. Mix in the raspberries, yogurt, and vanilla. Place in refrigerator to chill.
  2. Beat the egg whites then mix in the fructose. Beat until peaks form. Fold into the raspberry mixture. Refrigerate until set.
  3. Transfer into parfait glasses and sprinkle almonds on top, if desired.
