2 each  eggs
1 oz  black pepper
0 1/2 tsp  vegetable oil
3 tbsp  chopped parsley
  1. In small bowl, whisk eggs for 1 minute. Add pepper.
  2. In small skillet, heat oil over medium. Pour eggs into skillet. Season with parsley and cook, covered, for 3 minutes.
  3. Fold in half and transfer to serving plate.
