1 lb  large raw shrimp
1 tbsp  extra virgin olive oil
1 each  medium onions
2 each  medium garlic cloves
4 cup  canned unsalted diced tomatoes
2 tbsp  fresh lemon juice
0 1/2 tsp  ground coriander
0 1/4 tsp  ground ginger
0.125 tsp  ground cayenne (red pepper)
0 1/4 tsp  ground cumin
4 each  parsley sprigs
  1. In nonstick skillet, heat oil to medium. Sauté onion and garlic for 3 minutes.
  2. Add tomatoes, lemon juice, coriander, ginger, pepper, and cumin.
  3. Bring to boil then lower heat. Cover and let simmer for 15 minutes. Stir once to mix.
  4. Add shrimp and cook for 3 to 5 minutes, until shrimp is pink and opaque. Garnish with parsley.
