4 each  potatoes, fresh, medium
2 tsp  extra virgin olive oil
1 each  chopped green bell peppers
0 1/4 tsp  salt
1 pinch  black pepper
2 tbsp  fresh chives
Directions
  1. Heat the oil in a nonstick skillet. Combine the potatoes, bell pepper, salt, and pepper in the skillet.
  2. Cook, covered, for about 20 to 25 minutes over medium heat. Stir infrequently.
  3. Mix in the chives. Serve.
