0 1/2 tsp  vegetable oil
2 each  fresh green onions
2 each  small tomato
1 cup  chicken broth
1 tsp  olive oil
0 1/2 tsp  ground cumin
1 pinch  salt
1 tsp  curry powder
0.125 tsp  ground cinnamon
1 cup  couscous
2 tbsp  chopped parsley
  1. Heat the oil in a nonstick skillet. Saute the onions and tomatoes for 3 minutes. Turn the heat off.
  2. Mix together the chicken broth, cumin, salt, curry, and cinnamon. Cover and bring just to a boil then turn the heat off.
  3. Mix in the couscous and let sit, covered.
  4. Stir in the tomatoes and green onions. Fluff then serve with the garnish on top.
