1 lb  fresh carrots
1 1/2 tsp  fructose sweetener
2 tsp  fresh lime juice
1 tsp  dijon mustard
1 tsp  curry powder
2 tsp  walnut oil
1 oz  seedless raisins
2 tbsp  chopped parsley
  1. Fill a large saucepan with 1 inch of water. Bring to a boil.
  2. Put the carrots in a steamer basket, place over the water, and steam, covered, for about 20 minutes.
  3. Combine the fructose, lime juice, Dijon, and curry powder in a bowl.
  4. Heat the oil in a skillet. Put the carrots and raisins in the skillet. Toss continuously for 2 minutes.
  5. Pour the lime juice mixture over the carrots and stir. Cook for another 2 minutes. Garnish with the parsley.
