1 cup  yellow cornmeal
0 1/2 cup  Flour, all purpose, unbleached, enriched
0 1/2 cup  whole wheat flour
4 tsp  low sodium baking powder
1 cup  fat free milk
1 each  eggs
1 cup  fresh cranberries
0 1/2 cup  chopped walnuts
1 each  cooking spray
  1. Preheat the oven to 400 degrees. Spray a 12 cup muffin pan with the cooking spray.
  2. Mix together the cornmeal, flours, and baking powder in a bowl.
  3. In a separate bowl, combine the milk, egg, and oil. Add to the cornmeal mixture.
  4. Mix in the cranberries and nuts.
  5. Fill the muffin cups 2/3 full. Bake for 15 to 20 minutes.
