1 tsp  olive oil
0 1/4 cup  fresh chopped celery
1 cup  fresh mushroom slices
2 cup  cooked chicken breast, diced
0 1/4 cup  pimentos
0 1/4 cup  slivered almonds
2 tbsp  cooking sherry
1 pinch  black pepper
4 piece  sliced whole wheat bread
  1. Pour the oil into a nonstick skillet. Saute the celery and mushrooms.
  2. Mix in the chicken and pimientos. Cook until heated through.
  3. Mix in the almonds, sherry, and pepper.
  4. Place the chicken mixture on top of the bread slices and serve.
