2 tsp  safflower oil
2 each  medium shallots
1 each  medium garlic cloves
1 each  medium celery stalks
0 1/2 cup  fresh mushroom slices
1 each  egg whites
1 pinch  salt and pepper
1 cup  Buckwheat, groats
2 cup  low fat unsalted chicken broth
0 1/2 oz  pine nuts
2 tbsp  chopped parsley
  1. Heat the oil in a nonstick saucepan. Cook the shallots, garlic, celery, and mushrooms for 5 minutes over medium heat.
  2. Beat the egg white in a bowl. Add the salt and pepper. Add the mixture to the saucepan. Mix in the groats and broth. Bring just to a boil then decrease the heat. Cook, covered, for about 10 minutes.
  3. Once the liquid has absorbed, mix in the nuts and fluff. Serve with the parsley on top.
