1 tbsp  extra virgin olive oil
1 each  small onions
0 3/4 cup  brown basmati rice
0 1/4 cup  white wine
0 1/4 tsp  ground thyme
0.125 tsp  black pepper
2 cup  low fat unsalted chicken broth
1 cup  frozen green peas
0 1/2 cup  chopped red bell peppers
2 tbsp  grated parmesan cheese, low sodium
  1. Heat the oil in a nonstick saucepan. Saute the onions until they become soft.
  2. Rinse the rice and drain. Add the rice to the saucepan and cook to brown.
  3. Mix in the wine, thyme, pepper, and broth. Bring just to a boil then decrease heat and simmer, covered, about 15 to 20 minutes.
  4. Stir in the peas and bell pepper.
  5. Cook for 5 minutes, stirring infrequently. Top with the Parmesan.
