1 cup  dried apricot halves
8 oz  soft tofu
2 tsp  vanilla extract
2 tbsp  nonfat dry milk powder
2 each  egg whites
1 oz  fresh mint
  1. In small bowl soak apricots in hot water for 30 minutes. Drain and reserve water.
  2. In blender, place tofu, apricots, vanilla, and dry milk. Pulse until smooth. Add reserved water to blender 1 tablespoon at a time. Pulse to mix. Repeat until desired consistency is reached.
  3. Transfer apricot mixture to small mixing bowl.
  4. In clean, dry mixing bowl, whip egg whites with electric mixer until stiff peaks form.
  5. Fold egg whites into apricots until well blended
  6. Fill dessert glasses or bowls with the mousse and refrigerate until chilled. Garnish with mint leaves.
