Apple Mixture
2 each  medium apples
1 tbsp  cold water
6 tbsp  apple cider
0.125 tsp  ground cinnamon
0 1/2 tsp  Margarine, 80% fat, unsalted
1 pinch  sweetener (sugar substitute)

Topping
2 tbsp  Cheese, ricotta, low fat, Frigo
1 tbsp  plain nonfat yogurt
1 tsp  vanilla extract
1 tsp  SPLENDA┬« No Calorie Sweetener, granulated
1 tbsp  chopped walnuts
Directions
  1. Combine all ingredients for the apple mixture in a 2 quart casserole, tossing well.
  2. Cover with wax paper and microwave on high for a total of 5 minutes or until tender, stirring every minute or so.
  3. Let stand covered for 2 minutes to finish cooking.
  4. Whisk topping ingredients together using a wire whisk.
  5. Top each serving with 1 1/2 tablespoons of the cheese mixture, and sprinkle with ground nuts and cinnamon. Serve hot or cold.
