3 lb  potatoes, fresh, medium
8 tsp  white wine vinegar
3 each  large hard-boiled eggs
0 1/4 cup  light mayonnaise
0 1/4 cup  reduced fat sour cream
0 1/4 cup  low fat buttermilk
3 tbsp  yellow mustard
1 tsp  black pepper
0 1/2 tsp  kosher salt
0.6667 cup  fresh chopped red onion
0.6667 cup  chopped red bell peppers
0.6667 cup  chopped sweet pickles
0 1/2 cup  fresh chopped green onion
6 oz  sugar snap peas
Directions
  1. Cook potatoes in water for 12 minutes or until tender but not mushy drain.
  2. Toss potatoes with 2 tablespoons vinegar let fully cool.
  3. Slice egg whites, save yolks for another use.
  4. Whisk together 2 teaspoons vinegar, mayonnaise, sour cream, buttermilk, mustard, pepper, and salt.
  5. Combine vinegar mixture with egg whites, potatoes, red onion, red bell pepper, pickles, green onions, and peas.
