2 tbsp  fresh rosemary
3 tbsp  low sodium soy sauce
1 1/2 tbsp  extra virgin olive oil
1 tbsp  medium lemons
2 tbsp  fresh lemons
2 tsp  grated orange peel
1 tbsp  Oranges, fresh, with peel
1 tsp  fresh ginger root
2 tsp  honey
0 1/2 tsp  salt and pepper
0 1/4 tsp  black pepper
5 each  garlic cloves, chopped
1 1/2 lb  Fish, swordfish, fillet, baked/broiled
0 3/4 cup  Greens, cowpea, cooked, drained
12 each  chopped red bell peppers
1 each  cooking spray
  1. Add rosemary, soy sauce, oil, lemon rind and juice, orange rind and juice, ginger, honey, salt, pepper, garlic, and swordfish to a resealable plastic bag. Let fish marinate 30 minutes in refrigerator, flipping bag one time.
  2. Preheat grill.
  3. Take fish out of bag and thread onto 4 skewers alternately with onions and pepper. Lay skewers on a cooking spray coated grill rack and grill 8 minutes, flipping one time.
