  1. Wash and dry watercress. Slice shallot into thin slices.
  2. Trim ends off of green beans and blanch for 4 to 5 minutes. Strain and immediately dunk in an ice bath.
  3. Whisk together lime zest and vinaigrette. Toss watercress with shallots, green beans, pine nuts, and dressing.
