2 each  Bacon, cured, naturally hardwood smoked
2 cup  chopped apples
0 1/2 cup  red onion, sliced
1 each  medium garlic cloves
2 tbsp  cold water
2 tbsp  cider vinegar
3 cup  Brussels Sprouts, fresh
1 tsp  stoneground mustard
0 1/2 tsp  kosher salt
0 1/4 tsp  black pepper
Directions
  1. Crisp bacon in a frying pan; take out bacon using a slotted spoon and crumble.
  2. In same pan, saute apple, onion, and garlic for 5 minutes.
  3. Pour in water and vinegar, releasing any browned bits on the bottom of the pan.
  4. Stir in Brussels sprouts and cook 5 minutes.
  5. Add mustard, salt, and pepper; take pan off of heat.
  6. Top with crumbled bacon.
