1 lb  red snapper
1 each  olive oil cooking spray
4 tsp  low sodium soy sauce
0 1/4 tsp  ground ginger
1 tbsp  olive oil
2 each  medium bell peppers
4 oz  fresh mushroom slices
  1. Preheat broiler. Place snapper in a cooking spray coated shallow baking pan.
  2. Combine soy sauce and ginger; brush over fish. Place under broiler and broil about 8 to 10 minutes or until fish tests done.
  3. Meanwhile, heat oil in a large nonstick skillet. Cook peppers and mushrooms until just crisp-tender. Serve with or over the snapper.
