1 tsp  olive oil
2 cup  fresh mushroom slices
1 each  medium onions
0 1/4 tsp  kosher salt
0 1/4 tsp  black pepper
2 tbsp  cooking sherry
1 tbsp  white all purpose flour
0.6667 cup  fat free milk
0 1/4 cup  low fat unsalted chicken broth
1 lb  potato pierogies
2 tbsp  reduced fat sour cream
  1. Pour oil in a frying pan and heat over medium-high heat. Saute the mushrooms and onion for 4 minutes; season with salt and pepper.
  2. Pour in the sherry and cook until almost all the liquid is absorbed. Stir in the flour; add in the milk, broth, and pierogies and let mixture boil.
  3. Take pan off of heat and mix in the sour cream.
