0 1/4 cup  kosher salt
4 1/2 cup  cold water
4 each  lean center loin pork chop/roast
1 pinch  salt and pepper
1 tbsp  canola oil
  1. Combine kosher salt with 41/2 cups water, stirring until melted. Put in a large resealable bag. Add pork chops and seal bag. Let stand in refrigerator at least 8 hours.
  2. Remove pork chops and pat dry. Sprinkle with salt and pepper.
  3. Heat oil in large skillet and cook over medium-high heat to 140 degrees, turning once.
