24 oz  Fruit, mixed, individually, FS
3 tbsp  orange juice
1 1/2 tbsp  fresh mint
0 1/4 cup  part skim ricotta cheese
1 1/2 tbsp  confectioners sugar
0.125 tsp  vanilla extract
  1. Mix together fruit, orange juice, and mint in a serving bowl.
  2. Using a food processor or blender puree cheese, sugar, and vanilla until smooth. Spoon over top of fruit.
