4 each  Artichokes, globe, medium, fresh
12 oz  Tofu, firm, silken, 1" slice
4 tsp  fresh mint
4 tsp  fresh lemon juice
1 tbsp  olive oil
2 1/2 tsp  honey mustard
1 tsp  fresh lemon peel
0 3/4 tsp  salt
0 1/4 tsp  curry powder
0 1/4 tsp  black pepper
  1. Arrange the artichokes upside down in a steamer basket and place in a pot with 1 inch of boiling water.
  2. Place lid on pot and steam for 20 to 25 minutes or until soft.
  3. Using a food processor or blender, puree tofu, mint, lemon juice, oil, mustard, lemon peel, salt, curry, and pepper until smooth. Serve dressing as a dipping sauce with artichokes.
