1 lb  Tomatillo, fresh, medium
2 tbsp  fresh lime juice
1 each  whole jalapeno pepper
0 1/2 cup  fresh chopped onion
0 1/2 cup  fresh cilantro
1 tsp  kosher salt
  1. Remove husks and stems from tomatillos. Using a food processor or blender, puree tomatillos, lime juice, and pepper until finely diced. Blend in onion, cilantro, and salt until well combined, but still chucky.
